Germany: Pastries

10 questions · Food & Drink

Baked treats from Germany: recognise the pretzel, Black Forest cake, Berliner, Bienenstich, streusel cake, Lebkuchen, Stollen, Franzbrötchen, Donauwelle and cheesecake. Good to know: The pretzel owes its typical shape to looped strands of dough, and Black Forest cake from the Black Forest gets its splash of kirsch in the cream. The Berliner is called Pfannkuchen, Krapfen or Kräppel depending on the region, and the name bee sting cake alludes to its honey-sweet almond topping. ‘Streusel’ means something like crumbs, Nuremberg is famous for its Lebkuchen, and among the Stollen the Dresden Christstollen is the best known. The Hamburg Franzbrötchen resembles a flattened croissant, in the Donauwelle the cherries press the batter into a wave pattern, and German cheesecake is usually made with quark rather than cream cheese. Many of these classics belong to a set time of year: Lebkuchen and Stollen to Advent, the Berliner to New Year's Eve and carnival, and tray-bakes such as streusel cake and Donauwelle to Sunday afternoon coffee.
