A culinary world tour on a plate: some dishes have become so international that we almost forget where they come from. Pizza comes from Naples, and the Pizza Margherita carries the colours of Italy. ‘Sushi’ refers to the vinegared rice, not the raw fish, and paella from Valencia is cooked in a wide, shallow pan. Lasagne is one of the oldest documented pasta dishes, the Japanese noodle soup ramen originally came from China, and the French croissant is said to owe its crescent shape to a victory over the Ottomans. Goulash was once the food of Hungarian cattle herders, Wiener schnitzel is a thin, breaded veal cutlet, and the hamburger became the symbol of fast food in the USA. Pad thai, fried rice noodles with peanuts, egg, tamarind and lime, is regarded as Thailand's national dish. Some of it is simply street food: currywurst with ketchup and curry powder, to which Berlin even devoted a museum, Mexican tacos, traditionally eaten by hand, falafel made from chickpeas in the Middle East, and Chinese dim sum, served with tea.
