Louis Pasteur, born in eastern France in 1822, was a chemist and his work saved countless lives. In his day many still believed in "spontaneous generation": that life arose spontaneously from dead matter, that maggots simply "appeared" in meat. Pasteur disproved this with elegant swan-neck-flask experiments and showed that tiny microorganisms from the air are responsible for fermentation and decay. From this followed his groundbreaking germ theory: many diseases, too, are caused not by "bad air" but by microbes. To preserve food, he developed a process of briefly heating it to kill germs: the pasteurization of milk, beer and wine still named after him. Pasteur went further and developed vaccines, among them against the livestock disease anthrax and (his most famous triumph) against the dreaded rabies. In 1885 he dared to inject his still-untested serum into a boy bitten by a rabid dog. The boy survived, and Pasteur became a national hero overnight. In his honour the Pasteur Institute was founded in Paris in 1888, and it still shapes infection research worldwide today. Marked by several strokes, Pasteur died in 1895: one of the most honoured scientists of his age, whose insights changed hygiene and medicine forever.
